Gérard Vives

Gérard Vives, French chef, spice expert and member of the Terra Madre network, has dedicated a chapter of his recent book La bonne cuisine bon marché bonne pour la santé (Good cooking at a good price and good for the health) to the products of the sea. His recipes use only sustainable fish, and Gérard goes as far as to say that at this point eating certain species is a criminal act.
